Chef Michael Cimarusti has netted more than a few big wins throughout his culinary career and his recent successes further cement his status as one of L.A.’s most acclaimed chefs and restaurant owners. The James Beard award-winning chef owns two of L.A.’s most revered seafood restaurants, both of which have recently achieved major milestones.
After nearly two decades, Providence — opened in 2005 at 5955 Melrose Avenue — remains one of the longest-standing fine-dining establishments in Los Angeles. It has retained two Michelin stars since 2009 and recently earned its first-ever Green Michelin Star, which recognizes establishments “at the forefront of the industry when it comes to their sustainable practices.” The tasting-menu restaurant recently underwent a major, five-week renovation and now flaunts impressive decor inspired by the dynamic dishes it serves and highlighted by Parisian glass artist Jeremy Maxwell Wintrebert‘s biomorphic light fixtures and hand-finished Venetian plaster in rich shades of green and blue.

In an interview for the 10th anniversary of West Hollywood seafood hotspot Connie and Ted’s, James Beard Award-winning chef and owner Michael Cimarusti served up a heartwarming anecdote about the late Robert Forster.
When the restaurant opened in 2013, it replaced the beloved diner Silver Spoon, a favorite hang for working actors. “We did get a bit of backlash,” Cimarusti explained, noting how many regulars like Forster were suddenly without a haunt to call home. “He was at the Silver Spoon every day, literally every day. We’d see him all the time. Eventually, the news broke that the last day of operations was going to be coming up, on New Year’s Eve, so we asked, ‘What are you going to do tomorrow?’”
Forster already had a plan. “He said, ‘Well, I’m going to be honest with you. I’m probably going to Starbucks. I’m going to...

‘Hell’s Kitchen’ season 19 episode 13 recap: Who was eliminated in ‘It’s Time’? [Updating Live Blog]
It seems like only yesterday the cast of 18 chef-testants entered the “Hell’s Kitchen” Season 19 stage, but now there are only five people still in the running to become the head chef at Gordon Ramsay‘s Lake Tahoe Restaurant. These black jacket wearers are: Kori Sutton, Mary Lou Davis, Cody Candelario, Declan Horgan and Amber Lancaster. At the end of Wednesday’s 13th hour, Chef Ramsay grabbed one more jacket, leaving just the Final 4 left to fight for the crown. Don’t worry, this episode was no April Fool. So how did it all play out?

Joe Sasto was eliminated in the season premiere for an unfortunate seafood dish on flatbread. Angelo Sosa was ousted in “Gold Standard” for drowning a piece of tuna in super-sweet broth. So it was time for what Sasto called “an Italian throw-down bro-down” between the two chefs looking for redemption. And what better way to redeem themselves after their bad seafood than to make new fish dishes to be judged by renowned seafood chef Michael Cimarusti, who himself was a favorite of food critic Jonathan Gold.

Sabrina Brimhall has been eliminated from Hell's Kitchen, reducing the pool of chefs to just five. The 22-year-old prep chef from Moreno Valley, CA, was sent home from the Fox competition on Wednesday night following a disastrous dinner service for the group that saw Gordon sending every chef out of the kitchen and shutting the restaurant. This week's episode saw the chefs working individually for the first time. Their first challenge was to create a "spectacular" amuse-bouche for a group of distinguished chefs: Ludo Lefebvre (who Sabrina had a crush on), Quinn and Karen Hatfield, Suzanne Tracht and Michael Cimarusti. They were marked out of ten by each chef for presentation and taste. Gail: Sesame chicken spring roll with peanut sauce, honey and lime.
Presentation: 44/50, Taste: 43/50, Total: 87/100 Sabrina: Salmon, glazed carrots and jalapenos

One thing that has separated Top Chef Masters from its predecessor is that these master chefs--for the most part, anyway--really do seem to love and support one another in a way that the hungry chefs on Top Chef really don't seem to do. This week's episode of Top Chef Masters ("Trick In A Box") could have been a prime opportunity for the chefs to stab each other in the back but the elimination challenge--in which Art Smith, Jonathan Waxman, Roy Yamaguchi, and Michael Cimarusti all had to shop for one another and prepare a mystery box of ingredients--resulted not in sabotage and subterfuge, but rather a celebration of both ingredients and one another. Aw. I thought that this week's gathering of master chefs was one of the toughest groups yet and each of them had some major strengths they were playing for, plus they each had such different, individual styles of cooking.
