New York, Nov 10 (Ians) The just-unveiled Michelin Guide for Washington, D.C., New York and Chicago for 2023 has brought Diwali cheer to three Indian restaurants, two of which got their coveted first star from the guide regarded as the final word on gastronomy. Last year, the number was just one.
The restaurantsare Semma in New York City, Rania in Washington, D.C., and Indienne in Chicago. They representthree distinctive styles of Progressive Indian Cuisine, their chefs bringing their own unique touches to the table.
Semma’s Vijay Kumar, who grew up in rural Madurai and has worked up the ranks, which included being a line cook on a cruise ship, brings the flavours of his memory to the second-time Michelin star-winning restaurant, which gets its name from the colloquial equivalent of ‘super’ or ‘fantastic’ in Tamil.
Kumar, who was previouslywith Rasa, San Francisco, has partnered with Roni Mazumdar and Chintan Pandya.

Welcome to this week’s “Just for Variety.”
When the announcement came that “Magic Mike’s Last Dance,” the third movie in Channing Tatum’s male stripper franchise, had the greenlight, it was revealed the film would premiere directly on HBO Max. However, director Steven Soderbergh says a theatrical run is still on the table. “We’re talking about it,” Soderbergh told me recently while promoting the “Magic Mike Live” tour, which makes its North American debut in Miami in October. “It’s certainly hard to argue that this isn’t a movie that’s best seen in a theater, because we have the data. People, primarily women, were going in packs, in large groups, to see the ‘Magic Mike’ movies.”
Soderbergh returns as director after helming the first “M.M.” (the second was directed by Gregory Jacobs). “That’s the discussion with Warners right now — can we eventize this?...

Chef and restaurateur David Chang has a way with words. His Momofuku culinary brand was named after the Japanese words for “lucky peach” with a nod to ramen inventor Momofuku Ando. But Chang has also acknowledged that it’s no accident that Momofuku sounds very similar to “motherfucker.”
Contained in that auspicious, delicious, and mischievous moniker are clues of what to expect in his Netflix food series with its own colorful name, “Ugly Delicious.” While each of the eight episodes focuses on one specific comfort food such as pizza or fried chicken, the series examines far more than just plating and recipes. The spotlight dish also serves as a tasty vehicle by which to examine historical and social issues, and hopefully build bridges across politics and continents.

Colin Trevorrow got quite a promotion after releasing his first feature film, the sci-fi indie Safety Not Guaranteed. The director was plucked out of Sundance and dropped into the studio system, tasked with helming the reboot of the Jurassic Park franchise, Jurassic World. But how does he follow up directing one of the highest grossing films of all time? By stepping away from dinosaurs -- Trevorrow wrote but will not direct the sequel -- and returning to his roots with The Book of Henry, a $10 million movie about a single mom (Naomi Watts) parenting a genius son. After that? Trevorrow returns to the big leagues for Star Wars: Episode IX. For the moment, though, he's focusing on The Book of Henry, which is part coming-of-age, part family drama, part tearjerker, part thriller, part revenge fantasy...

This in-house study of totemic Copenhagen restaurant Noma looks finger-licking, but lacks much nutritious insight
Like so many Danish documentaries, this study of the Copenhagen restaurant Noma displays, like the cooking itself, an exceptional level of craftsmanship and good taste. However, as a piece of film-making it’s more conventional than the food featured, made under the supervision of executive chef René Redzepi, whose voiced-over humble-bragging about his achievements is like a cloying sauce that overpowers a dish. The individual plates of food, shot in loving closeup, look so inviting and delicious you may want to lick the screen; they even get their own credit block at the end (“Yeast caramel with skyr”), like soundtrack items or excerpts from poems or films. That at least may be a cinematic first. But ultimately this feels a bit too much like one long advertisement for the restaurant and misses an opportunity to...

When making a documentary about food, how do you express the two most central senses to the experience that film fails to capture: taste and scent? Without Smell-o-Vision or another gimmicky technology, you’re left largely with the visual, and first-time feature director Pierre Deschamps relies heavily on beautiful cinematography for “Noma: My Perfect Storm.” Though having el Bulli’s Ferran Adriå appear to compliment your subject’s food doesn’t hurt either. The documentary centers on chef René Redzepi and his acclaimed Copenhagen restaurant Noma, which has jockeyed for the title of top restaurant in the world over the last few years. Deschamps and his camera capture the vivid color and texture of each dish at Noma, showcasing bright greens and deep purples. Each image is crisp. Close-ups and slow motion expose the care paid to each detail of every plate, while fast motion expresses the frenetic energy of the kitchen during service.

Magnolia Pictures has secured North American rights to food documentary "Noma — My Perfect Storm," which chronicles the life (and restaurant) of chef René Redzepi. His famed Copenhagen-based restaurant "Noma" was voted "best in the world" from 2010-2012, and after a surprise defeat in 2013, reclaimed the prize in 2014. (Check out Anthony Bourdain's episode on "Noma" on CNN's "Parts Unknown.") Produced by Documentree Films Ltd. and directed by Pierre Deschamps ("Rugby: The Life of New Zealand"), the film is partly inspired by two books written by Redzepi: "Noma: Time and Place in Nordic Cuisine," and "René Redzepi: A Work in Progress." Filmmaker Pierre Deschamps spent more than three years at Noma following the eccentric chef, where he learned about the reinvention of Danish cuisine through a process known as "foraging" — a pioneered approach which requires sourcing...

The release this week of Jon Favreau’s Chef provides a new addition to the popular sub-genre of Food Cinema. From Eat, Drink, Man, Woman (1994) to Julia & Julia (2009), film directors have often created meals so mouth-watering that the thought of another handful of chewy, over-toffeed popcorn makes a mockery of one’s very soul.
Here then is the ultimate HeyUGuide to the ultimate Cine-Banquet, for any budding chefs out there to prepare for like-minded friends (please consult Alexander Payne’s Sideways for your wine selection).
Amuse-bouche: ‘Rillettes du Canard’ Red Dragon (2002)
“Hannibal, confess. What is this divine looking amuse-bouche?” Dr. Lecter is perhaps wise to keep back some of the secrets of the lavish banquet he has prepared for The Baltimore Opera Society. Few of them would suspect that the missing (and talentless) flutist from their own woodwind section is not just the ghost at the feast, but the key ingredient.

As told to Nuzhat Naoreen.
I was , because I think out of all of the challenges, this one really allowed the chefs’ own personal creativity and identity to shine through, and I was very happy about that. I thought that they took the challenge and ran with it. This was a glorious dinner, it was so much fun to eat and to be there. All of the food was striking, not only for how it tasted and felt on the palate and the textures and different temperatures, but also the way it looked. They really did a great job visually...
