The father worked for the Nestlé Group for decades and his wife looked after the household and family. Gubser graduated from school with a high school diploma. He then trained as an actor at the renowned Max Reinhardt Seminar in Vienna from 1978 to 1981. As a result, he played on stage at Vienna's Burgtheater, among other places. From 1983 he was a permanent member of the ensemble at the Bavarian State Theater in Munich for three years. He then had an engagement at the Wiesbaden State Theater. Gubser was honored by the State of Berlin in 1986 for his stage achievements. At the end of the 1980s he turned to filmmaking and became popular with audiences of crime series. From 1989 to 1992 he investigated as a Swiss commissioner in the European series "Eurocops".
In the romantic drama "Confessional of Desire" from 1997, directed by Peter Lehner, he played a young priest. The trained actor also appeared in a series role in 2002 as Erik Hilgers in the early evening episodes of "Star Catcher". In 2005 he won the Swiss television award TV Star in the "Film" category, in 2008 the audience award "Festival of German Film" and the Interfilm Prize for "Hellogoodbye" as part of the Max Ophüls Festival. In the same year he appeared again as a stage actor in the midlife comedy "Alte Freunde", in which he played one of four former college friends. He also produced the performance with his other production company Gubser&Bloch, founded in 2006. In the stage comedy "Rockerbuebe", produced by Gubser&Bloch, he repeatedly impressed with his comic talent. Stefan Gubser has worked with many well-known filmmakers, such as Markus Fischer and Markus Imboden. In his career spanning more than 30 years, he has successfully played leading and supporting roles with countless renowned colleagues such as Ben Gazzara, Dana Vavrowa, Matthias Habich, David Carradine and Claudia Cardinale.
Gubser and his company "tellfilm" produced Lucerne's first "Tatort" in 2010, which also marked Swiss television's return to this international crime production after a ten-year absence. At the same time, he played Inspector Reto Flückinger, who has been firmly supporting the Swiss "Tatort" team since 2011. The first episode, "Wishful Thinking," was also a debacle. Swiss television postponed the broadcast from spring 2011 to August of that year for post-production because his beautiful "Tatort" colleague Sofia Milos as Abby Lanning was allegedly miscast.
In 2017, the fairy tale book "Di gschtifleti Gans - Grimm-Märli und Schlafliedli zum Läse und Loose", illustrated by Frank Baumann, was published together with his daughter Stefanie.
