I can always tell real great chefs from run of the mill when the first thing they do is dice onions and mince garlic in a saute pan .. strictly run of the mill and totally lacking imagination... even the alleged great sou chef gordon ramsey does it ...part of showing off knife skills but does nothing to demonstrate cooking skills or mastering tastes.
