I will not write about the poems since that has been covered extensively. I just want to point out a few things I haven't seen mentioned in depth. Don't dog me on grammar since these are just thoughts I'm jotting down.

I first rated this movie low but couldn't stop thinking about it and changed my mind

Laura's dreams and premonitions are a big part of the story.

1-The twins they will have and Paterson sees twins everywhere.

2-She dreams she will have a successful cupcake business and sells out at the local market.

3-She wants to be a country western star but spends more time on her outfit than learning to play but still learns half a song in one afternoon.

4-She worries about Paterson's notebook and his poetry lost, with cause. More about this later.

Laura calms Paterson. Everything is sweet and soothing. I think Paterson had a rough time in the military as all soldiers and she keeps him in this state of non-emotion.

He stays calm in the bar when he disarms Everett. Not rattled at all. He also laughs at 3 different comments that the bus could have become a fireball. He knows about fireballs from war.

Paterson starts changing. He meets a young twin girl who writes better poetry than him in her secret book.

He can start over with the book the Japanese man gave him. The first poem he writes at the end in his new notebook is different than his earlier poems and better.

Paterson wants things to change but slowly. That is why he wrote his last poem in his secret book about another woman. Did he subconsciously leave the notebook out for the dog to crew. And the best part is Laura is already trying to fit the pages back together and mentions that she can glue it all together. They both poo-poo the idea but I think she will and read his last poem.

I missed a lot but these were a few things I wanted to mention.
